This is my go to kitchen knife. Holds an edge very well, strap on a steel a few times and slices great. It's the perfect size for using as a steak knife, slicing up vedalia onions and mushrooms, taters and maters. Develops a patina quickly. I cannot speak more highly of a knife for 95% of kitchen duty. The only time I need to grab a different knife in the kitchen is cutting steaks from a loin or sirloin tip and need a larger 10-12" knife.
